I love my cast iron skillet. I got it at Savers Thrift Store for just $12.99! It killed me to take it home and give it a thorough washing (yes, with soap) but it was from a thrift store, I found it necessary. Since then, I follow the methods listed below and the pan is amazing! I guarantee you, if you try cast iron and properly maintain it, it'll last longer than any teflon pan you ever purchase. This is the only way that I cook eggs. The flavor is amazing! If you go to garage sales, estate sales or thrift stores you'll find them for much less than department or big box stores sell them for. Don't be afraid of rusty pans, they can be easily be brought back to life. Cast iron pans can be handed down from generation to generation. In my opinion, it's well worth the investment and maintenance time.

I made this a few years ago when corned beef was on sale for $5 at Vons. It was a major hit! It is incredibly easy to make. It's perfect for an easy St. Patrick's Day meal.

I had the privilege of seeing Loretta Lynn perform in Las Vegas. I would've paid but I was lucky enough to get 2 comped tickets. Viva Las Vegas, right? She is a professional, they don't make them like her anymore. Not only is she amazing to see on stage, but she is loyal to her band members, many of which are various generations of her own family. She mentioned one of my favorites during the concert, Patsy Cline. Hearing her sing a Patsy Cline song gave me the chills. Not only does she sing but I've heard that this lady is an awesome cook. Here's her fried chicken recipe:
